  • 1 carrot
  • 1 onion
  • ½ leek
  • 2 stalks of celery
  • 1 zucchini
  • 1  ½ liter or 1  ½ US quart of cold water

  2. Wash the vegetables well and cut them. Close the vegetables inside a gauze bag.
  3. Put them in a pot with the cold water. Bring to a boil at moderate heat and continue cooking for about thirty minutes over gentle heat.
  4. Strain the broth with a chinois.
  5. Salt it when needed.

  • For those who want it colored, they can also add pieces of tomatoes.
