  • 1.4 kg or 3 lb of green beans
  • 2 tomatoes
  • 2 cloves of garlic
  • 2 sweet white onions
  • 1 piece of chili
  • Extra virgin olive oil to taste

  2. Wash the beans well, remove the stem and the end. Cut them to a length of 1 31⁄32in.
  3. Cut the onion into julienne strips.
  4. Wash and cut the tomatoes into large pieces, removing the seeds.
  5. In a large pan with the oil, stew the onions for a few minutes. Add the chopped tomatoes and the green beans and start cooking. Add water to half the height of the vegetables and cook over a moderate flame for about forty minutes. Salt.
  6. Serve with some basil leaves.

Tips to ensure the success of the dish:

  • Do not cover the pan with a lid as the beans will become yellow.
  • Add the basil at the end because the heat will tarnish it.
