This summer pasta is very pleasant on hot days. My mother used to cook it often for our boat trips.
For some years, my father had a small motorboat, Cumanà, with which we used to go to the island of Ponza or to the island of Giglio. My mother furnished it with curtains, cushions, and various trinkets as if it were a house on the sea. When my father sold it, we gave up the seafaring life and especially the meetingswith original and extravagant people like those found in the ports.
This simple sauce is very good if the tomatoes are of good quality … Our grandmothers and our mothers knew how to do something very important in the kitchen: do the shopping!

Pasta with tomato fillets as Mama does

  • Preparation time: 20 minutes
  • Ingredients for 4 servings
  • Difficulty: Easy recipe

  • Ingredients
  • 350 gr or 12 oz of spaghetti
  • 350 gr or 12 oz of San Marzano tomatoes
  • Extra virgin olive oil to taste
  • 8 basil leaves
  • 1 clove of garlic
  • Salt and pepper to taste
  1. Instructions
  2. Boil water for pasta in a pot.
  3. Wash the tomatoes and cross them on top.
  4. Fill a second pot with water. Also,bring this to a boil. Insert the tomatoes and let them cook ten to twenty seconds depending on how ripe they are.
  5. Drain the tomatoes and place them in a bowl containing iced water. Peel them and remove the water and the seeds. Cut into fillets.
  6. Put the tomato fillets in a large bowl and dress with a whole clove of garlic, hand-chopped basil leaves, andoil. Season with salt and pepper.
  7. In the pasta saucepan, salt the boiling water with the coarse salt and stir the pasta.
  8. Drain the pasta and dress it with seasoned fillet tomatoes. Serve both warm and cold.

Tips to ensure the success of the dish:

  • The quality of tomatoes is essential. Tomatoes are practically the only ingredient in this recipe. If good and tasty, you will have an amazing dish. For this reason, I highly recommend making this dish in the summer.
  • Always add the basil at the end of the preparation. The basil is easily oxidized once cut, andwith the heat,it shrivels very quickly!
  • To best cook pasta, 1 US quart of water must be considered for every serving.
