It is a recipe that my mother often makes for dinners with relatives, andit is always a resounding success. It’s one of the winter desserts that I love the most.
Pears cooked in red wine

- 4 Bosc pears
- 500 ml or ½ US quart of dry red wine
- 200 gr or 7 oz of sugar
- 3 Cloves
- Zest of an orange
- Instructions
- Remove the peel from the pears and extract the core with a knife, leaving the petiole intact.
- In a saucepan, place the pears, the wine, the sugar, the cloves, andthe orange peel. Cook over lowheat for about thirty minutes, then raise the heat and reduce the sauce while stirring the pear from time to time.
- Place a pear on each plate, pour the syrup over it and serve it hot
Tips to ensure the success of the dish:
- Always choose the type of pears that remain intact during cooking.
- Dry red wine must be of excellent quality
- I often accompany pears cooked with a ball of zabaglione ice cream
