The Provatura is the proof; that is, it is the part that is obtained from the mass of cheese to test the quality of the spinning of the dough. Today, the Provatura is no longer in the shop: now the Romans too like mozzarella cheese and use it in its place.
This is the best recipe when you’re hungry, you have little time, andthe fridge is half empty. It is wonderful to enjoy the soft yolk together with the stringy cheese.

Eggs with Provatura or mozzarella cheese

  • 150 gr or 5 oz of cow milk mozzarella
  • 4 eggs
  • Grated Parmesan to taste
  • Extra virgin olive oil to taste
  • Salt to taste
  1. Instructions
  2. Cut the cheese into pieces.
  3. In a pan with some oil melt the cheese and then put the eggs shelled.
  4. Season with salt and mix the egg white with the cheese, trying not to break the yolks.
  5. Sprinkle with Parmesan, salt, and serve.

Tips to ensure the success of the dish:

  • Leave the mozzarella to drain in the fridge for at least twelve hours. The less the serum is present, thebetter the dish is.
  • Use fresh eggs.
