The leeks were well loved by the ancient Romans. Plinio reports that Nero used to eat only leeks before his singing performances because he was convinced that they would improve his voice. This passion has remained even up to our modern times.
The Roman tradition calls for the use of long broken pasta to make soups. I don’t know why broken spaghetti are so common, but I don’t remember a winter without the taste of these brothy goodies with broken spaghetti.

Mama's Pasta with Potatoes and Leeks

  • 150 gr or 5 oz of broken spaghetti
  • 2 medium potatoes
  • 1 leek
  • Meat broth to taste.
  • Extra virgin olive oil to taste
  • Grated pecorino cheese to taste
  1. Instructions
  2. Wash the potatoes, peel them, and cut them into pieces.
  3. Wash and slice the leek.
  4. In a pan with oil, sauté the leek for ten minutes on a low heat.
  5. Add the potatoes and then a few ladles of broth.
  6. Continue cooking for about twenty minutes or until the potatoes are cooked.
  7. Insert the broken spaghetti and cook them. Salt.
  8. Serve with grated pecorino cheese.

Tips to ensure the success of the dish:

  • Use non-floury potatoes that remain compact after cooking.
  • For a good meat broth look here.
  • To season this soup, in addition to grated pecorino, we often also use a little chili-flavored oil.
