This is a recent recipe from my mom that my sister and I often do for our suppers. It is simple and quick to prepare and makes an excellent figure if you have guests. Obviously, it would be best if the prawns, which are the main ingredient, are of good quality and fresh.
Shrimp, chickpea, and rocket salad

- Ingredients for 4 servings

- 700 gr or 1 lb 8 oz of shrimp
- 250 gr or 9 oz of boiled chickpeas
- Rocket (aka arugula)
- 50 gr or 2 oz of flaked almonds
- Extra virgin olive oil to taste
- Salt and pepper to taste
- Instructions
- Wash the rocket well. Chop it up with a knife.
- Pour the boiled chickpeas and the rocket into a serving dish.
- Toast the fillet almonds for a few minutes in a pan.
- In a saucepan, boil the prawns for a few minutes, drain them and peel then and remove the insides.
- Season the salad with oil, salt, and pepper. Add the freshly cooked prawns. Sprinkle the almonds on top.
Tips to ensure the success of the dish:
- I would suggest using dried chickpeas. If you want to use the pre-cooked chickpeas it would be better to rinse them well in running water for a couple of minutes.
- The shrimp insides should always be removed with sharp knife or similar tool.
