I often eat this in summer, when I come back from the beach or as an accompaniment to some fresh dairy product.
A very fast and easy to prepare recipe. It is both healthy and fresh.

Mom's Lentil Salad

  • Ingredients
  • 1 lb. 2 oz (500 grams) of Onano lentils
  • 1 carrot
  • 1 onion
  • 1 bay leaf
  • 2 sticks of white celery
  • Extra virgin olive oil to taste
  • Salt and pepper to taste
  1. Instructions
  2. Soak the lentils in cold water for half an hour.
  3. Place them in a pot, in plenty of cold water, with half an onion and a celery stalk. Bring to a boil and let simmer for an hour. Drain the lentils.
  4. Wash and dry the celery. Discard the larger leaves, the white stem part, and the filaments. Cut it into small slices.
  5. In a large bowl, season the lentils and the celery with oil, salt, and pepper.

Tips to ensure the success of the dish:

  • Choose small lentils such as those of Onano or Castelluccio.
  • The lentils should be boiled in a little water. The more water you put in the pot, the higher the risk that the lentils will mash.
