The cookies I like: crunchy and rustic. Good and very easy to make.

Sesame, oat and raisin cookies

  • 340 g of all-purpose flour
  • 180 g of butter
  • 180 g of muscovado sugar
  • 1 tablespoon honey
  • 100g of oat flakes
  • 100g of Corinth raisins
  • 100 g of sesame seeds
  • 10 g of baking powder
  • 1 pinch of salt
  • 2 eggs
  1. Instructions
  2. Preheat the oven to 250°F.
  3. Toast the sesame for ten minutes. Remove the sesame from the oven and raise the oven temperature to 350°F.
  4. Soak the raisins in a cup full of boiling water for about ten minutes. Drain it and squeeze it well.
  5. In a bowl, mix the butter with the sugar with a whisk. Add the eggs and honey and continue whisking.
  6. Finally, combine the sifted flour with the yeast, oats, raisins and sesame. Mix the dough with your hands until it comes together.
  7. Roll out the dough with a rolling pin to a thickness of 1/8 inch. Cut the cookies with a pastry cutter.
    Place them on a baking tray lined with baking paper.
  8. Cook in the oven until golden brown for about twenty minutes.

Tips to ensure the success of the dish:

  • Both the flour and the yeast must be sifted.
  • The cookies should be placed spaced apart on the baking tray because they will grow during cooking.
  • The pastry should not darken too much, so it is better to check the cooking every now and then. My oven takes about eighteen minutes.
