A delicious vegetarian main course.
It is quick to prepare and sumptuously succulent. Season with wine sauce or, if you don’t have time, with excellent quality balsamic vinegar.
Roasted Radicchio with red wine sauce

- 4 radicchios
- Extra virgin olive oil to taste
- Salt and pepper to taste
- 200 g of blue cheese
- Walnuts to taste
- For the wine sauce:
- 200 ml of red wine
- 1 shallot
- Black peppercorns to taste
- 1 bay leaf
- 1 teaspoon of butter
- 1 tablespoon of sugar
- Instructions
- Preheat the oven to 400°F.
- Wash the radicchios well, cut them into four parts.
- Grease a baking tray with oil and place the radicchios on it; season with salt, pepper and oil.
- Cook in the oven for about twenty minutes.
- In the meantime, prepare the wine sauce. Finely chop the shallot. Wilt it in a saucepan with the butter. Add the sugar and the wine. Cook over low heat until it has reduced by about half of its volume. Pass it through a sieve to eliminate the aromas.
- Serve the radicchio with flakes of blue cheese, lightly chopped walnuts and some wine sauce.
