Breaded and fried anchovies are a delight that we never miss. When you want to be generous with the delicacy, pair two anchovies with a slice of provola cheese inside that melts when fried. A bit laborious to prepare but uniquely delicious.
Fried anchovies stuffed with provola cheese

- 24 anchovies
- 1 egg
- Breadcrumbs to taste
- 100 g provola cheese
- Flour to taste
- Peanut oil for frying to taste
- Salt and pepper to taste
- Instructions
- Clean the anchovies thoroughly, removing the head and all bones.
- In a plate beat the egg seasoned with salt and pepper.
- Add the provola cheese to the lengthwise cuts you previously made to remove the bones, sealing them once more.
- Transfer them to a plate with flour, then pass them in the beated egg and at the end into a plate with breadcrumbs.
- In a deep pan, heat plenty of frying oil and bring it to 325°F.
- Drop the breaded anchovies into the pan a few at a time. Fry them for a few minutes, drain them on absorbent paper towel.
- Season with salt and serve while still hot with lemon wedges.
Tips to ensure the success of the dish:
- They can also be filled with mozzarella, as long as it is not too fresh and milky.
- Do not reuse the frying oil more than twice.
