Stewed green beens

- 1.4 kg or 3 lb of green beans
- 2 tomatoes
- 2 cloves of garlic
- 2 sweet white onions
- 1 piece of chili
- Extra virgin olive oil to taste
- 4 basil leaves
- Instructions
- Wash the beans well, remove the stem and the end. Cut them to a length of 1 31⁄32in.
- Cut the onion into julienne strips.
- Wash and cut the tomatoes into large pieces, removing the seeds.
- In a large pan with the oil, stew the onions for a few minutes. Add the chopped tomatoes and the green beans and start cooking. Add water to half the height of the vegetables and cook over a moderate flame for about forty minutes. Salt.
- Serve with some basil leaves.
Tips to ensure the success of the dish:
- Do not cover the pan with a lid as the beans will become yellow.
- Add the basil at the end because the heat will tarnish it.
