Lilli was my mother’s friend. Lilli was really womanly and a great lady. Always serene and sweet with everyone, she gave her simple and delicious recipes to her guests.
This is a delicious uncooked sauce for summer pasta. Obviously,the tomato must be nice, fragrant, and in season!
Spaghetti with Lilli's simple sauce

- 350 gr or 12 oz of spaghetti
- 350 gr or 12 oz of San Marzano tomatoes
- Extra virgin olive oil to taste
- Salt and pepper to taste
- 10 basil leaves
- Instructions
- Boil water for pasta in a pot.
- Wash the tomatoes and cross them on top.
- Fill a second pot with water. Also,bring this to a boil. Add the tomatoes to the water and allowthem tocook ten to twenty seconds depending on how ripe they are.
- Drain the tomatoes and place them in a bowl containing iced water. Peel them and remove the vegetation water and the seeds. Add the tomatoes into the food processor. Chop. The sauce must be thick. Season with oil, salt, pepper and basil leaves.
- In the pasta saucepan, salt the boiling water with the coarse salt and stir the pasta. Drain the spaghetti and pour into a serving dish with plenty of sauce on top.
Tips to ensure the success of the dish:
- The quality of tomatoes is essential. Tomatoes are practically the only ingredient in this recipe. If good and tasty you will have an amazing dish. For this, I highly recommend making it in the summer.
- Always add the basil at the end of the preparation. The basil is easily oxidized once cut, andwith the heat,it shrivels very quickly!
- To best cook pasta, 1 US quart of water must be considered for every serving.
