There is no region in Italy that does not celebrate the Feast of the Dead on the 2nd of November in its own way.
The tradition of eating these sweets is thought to date back to the Roman era, but they celebrated it during the spring months and not in the gray November, as in our days.
They are really sweet and crunchy. Those with good craftsmanship can try to make them look like bones for a slightly more macabre celebration.
Sweet bean for the Deaths

- 250 gr or 9 oz of almonds
- 250 gr or 9 oz of icing sugar
- 2 egg whites
- 1 pinch of cinnamon
- Instructions
- Place the almonds on a baking sheet. Toast in the oven at 250°F for fifteen minutes, turning them occasionally to toast uniformly. Remove from oven and allow to cool.
- In a food processor, coarsely chop the cooled almonds.
- In a bowl, mix the egg whites with sugar. Add the almonds.
- Form biscuits out of the mixture. Arrange them on a baking sheet covered with parchment paper and let them rest at room temperature for about two hours.
- Bake at 275°F for about twenty minutes.
Tips to ensure the success of the dish:
- When you want to chop almonds or nuts, it is always necessary to add a spoonful of sugar, taken from the total, and use the impulse mixer to prevent the blade from catching too much and causing oil to ooze.
