This recipe was passed on to me by an acquaintance a million years ago at a dinner with friends. Our paths merely crossed so I have no memory of him: I do not remember his appearance, name, or what he was like as a person. - 4 chicken legs without skin
- ½ liter or ½ US quart of red wine
- 1 anchovy in oil
- 110 gr or 4 oz of black olives
- Extra virgin olive oil to taste
- 1 clove of garlic
- 1 piece of chili
- Salt to taste
- Instructions
- In a pan with some oil, sauté the garlic and the chili pepper. Add the chicken thighs and brown them well on all sides. Lower the flame and add the anchovy. Remove the garlic clove and chili and pour in all the wine.
- Cook over low heat for fifty minutes covered with a lid. Add the olives and continue cooking for about ten minutes. Before serving, season with salt.
