Granny Irene used to prepare boiled meat every Thursday. She usually accompanied it with boiled potatoes and red turnips. The portions were still the same despite not feeding five children anymore but maybe only three grandchildren. So, the leftovers were a classic. At that time nothing was thrown away, but everything had to be reworked and recycled in disguise so that the diners wouldn’t notice.
This side dish was the perfect recycling of the advancedboiled potatoes. It is so good that today I boiled potatoes just to make it!
Granny Irene rehearsed potatoes
- Preparation time: 20 minutes
- Ingredients for 4 servings
- Difficulty: Easy recipe
- Ingredients
- 3 boiled potatoes
- Extra virgin olive oil to taste
- Salt and Pepper to taste
- Instructions
- Peel the boiled potatoes and cut them into cubes.
- In a pan with oil, sauté the potatoes until they become pretty crisp and nutty.
- Season with salt and pepper. Serve it hot.
Tips to ensure the success of the dish:
- The oil in the pan should be abundant so as not to have the potatoes burned.
- Cooking must be followed carefully. The transition from a beautiful hazel color to dark brown burnt is a matter of seconds and no one wants acrylamide in their dish!
