- 1.35 gr or 3 lbs. chicory
- 2 cloves of garlic
- 1 piece of chili
- Extra virgin olive oil to taste
- Salt to taste
- Instructions
- Clean the chicory and wash it very well.
- In a saucepan with boiling water put the chicory and boil it until the water is boiling again. Drain it well and put it to cool and then squeeze it.
- In a non-stick frying pan, fry the chopped chili peppers and garlic in some oil. After a few minutes add the chicory and let it dry.
- Salt and serve.
Tips to ensure the success of the dish:
- Vegetables should never boil in water at 220 °F because a high temperature will ruin the chlorophyll and cause it to lose nutrients. The temperature should be between 197 °F and 208 °F: for this, once the cooking water reaches a boil again, the vegetables should be drained.
- When the chicory is boiled,put the bowl in which it is inside a pan full of ice to make it cool quickly. This procedure fixes the chlorophyll, andtherefore the vegetables remaingreen.
