My parents, whose interest in cooking has become almost obsessive in the last few years following retirement, have discovered this recipe in one of the innumerable TV programs on food, then modified and adapted it to their tastes.

I love this recipe because it has all the characteristics of an intelligent dish: it is cheap, easy to make, and makes guests happy.
Breaded chicken thighs

- 4 chicken thighs without skin
- 2 eggs
- 300 gr or 10 oz of stale bread
- Rosemary to taste
- Salt and pepper to taste
- Extra virgin olive oil to taste
- Instructions
- In a bowl, mix the eggs and season with salt and pepper. Add in the chicken thighs. Cover everything with cellophane and store in the fridge for at least two hours.
- Dice the stale bread, excluding the crust. Add the rosemary to the bread mixture.
- In a mixer, coarsely chop the bread mixture and add the chopped herbs, making a rather grainy form of breadcrumbs.
- Coat the thighs with the breadcrumbs and place them on a baking sheet covered with parchment paper. Spray a little oil on top.
- Bake at 350°F for about forty minutes.
- Season with pepper and serve.
Tips to ensure the success of the dish:
- The marinade of eggs makes the meat of the chicken very succulent. I recommend leaving it in the fridge.
- Rosemary can be replaced with thyme.
