  • 5 Roman zucchini
  • 3 tablespoons of breadcrumbs
  • 1 tablespoon of grated Pecorino Romano cheese
  • Extra virgin olive oil to taste

  2. Wash and dry the zucchini. Remove the ends and cut them into thin julienne strips.
  3. In a large bowl season the zucchini with oil, salt, pepper, breadcrumbs, and Pecorino Romano.
  4. Place the zucchini in a thin layer in a baking dish with parchment paper.Bake in a hot oven at 350°F for about thirty minutes until golden brown.

Tips to ensure the success of the dish:

  • You can cut the zucchini with a knife, but I use this tool which saves me a lot of time in the preparation.
