Simple but very tasty dish. Some recipes are inextricably linked to childhood and then later, for some mysterious reason, disappear. When I was little my mother made it at least once a week, then suddenly, it was no longer served at the family table and I then occasionally ate it in a pizzeria. Strange!
Crouton with mozzarella cheese and anchovies

- 200 gr or 7 oz of loaf bread
- 200 gr or 7 oz of mozzarella cheese
- 8 anchovies in oil
- 20 gr or 1 tablespoon of butter
- Salt and pepper to taste
- Instructions
- Cut the cheese and bread into slices.
- Place a slice of bread in a baking pan alternating with a slice of fiordilatte.
- Bake in a hot oven at 400 °F for about twenty minutes.
- Meanwhile, put the butter and anchovies in oil in a small pan and melt them over a low heat.
- As soon as the crouton is ready, portion it and pour over the anchovy sauce.
- Salt, if necessary, and pepper.
Tips to ensure the success of the dish:
- Cut the cheese and the bread to the same thickness.
- It would be advisable to use mozzarella left in the refrigerator for at least twenty-four hours to remove some of the milk.
