Russian salad can certainly be listed among international recipes. Its history is controversial, above all it is not known who its inventor is. It is called something different in different countries and the ingredients change according to local tastes.
It spread in Italy at the end of the 19th century and also ended up in the most famous cookbooks of the beginning of XIX sec: from Pellegrino Artusi and from Ada Boni
For the Christmas Eve dinner mom, to make me happy, realizes this greediness every year as an appetizer. I eat it so much that it is definitely a whole meal!
Mama's Russian salad

- Ingredients for 6-8 servings

- 2 potatoes
- 300 gr or 10 oz of peas
- 200 gr or 7 oz of Green beans
- 200 gr or 7 oz of carrots
- 100 gr or 4 oz of green and black pitted olives
- ¼ jar of pickled vegetables
- A spoonful of pickled capers
- Mayonnaise to taste
- Lemon juice to taste
- Salt and pepper to taste
- To decorate:
- 2 boiled eggs
- 4 pickled gherkins
- Lemon slices
- Instructions
- Cut the olives into slices.
- Rinse the capers well.
- Wash and dry the beans and carrots.
- In four small pans, boil separately: potatoes, green beans, carrots and peas. When cooked, drain them, let them cool and cut them into cubes.
- In a bowl put the vegetables, the pickled vegetables cut finely, the capers, and the olives and season with oil, salt and pepper, and a little lemon juice. Then add a little mayonnaise and mix gently so as not to ruin the chopped vegetables.
- Pour the Russian salad into a salad bowl and give it a rounded shape. Cover it with a thin layer of mayonnaise.
- Decorate to taste with the hard-boiled eggs cut into wedges, the gherkins cut into a fan and lice the lemon.
- Leave in the fridge until serving.
Tips to ensure the success of the dish:
- The potatoes should be blanched. Cut into cubes and then boil with some vinegar in the water. This procedure serves to make the outside of the cube crunchy.
