An old dish. It is for children or for those who do not like real tripe. A dish that makes the word “comfort food” understandable to anyone. Everyone should eat this delicacy at least once. For those who are not fond of Pecorino Romano or don’t know what pennyroyal is, they can be replaced with a similar cheese and parsley, but it won’t be the same thing.
Fake Roman-style tripe

- For the omelets:
- 8 eggs
- 2 tablespoons of milk
- 1 bunch of parsley
- Salt and pepper to taste
- For the seasoning:
- 10 pennyroyal leaves
- 250 gr or a small can of peeled tomato sauce
- Grated Pecorino Romano to taste
- Extra virgin olive oil to taste
- Salt to taste
- Instructions
- Chop the parsley.
- In a bowl, beat the eggs and add some milk to the parsley continuing to mix well with a whisk. Season with salt and pepper.
- In a pan with some oil, cook a ladle of egg mixture first on one side and then on the other. Remove the first omelet and continue like this until the egg mixture is complete.
- Cut the omelets into thin strips, such as tripe.
- Put the tomato sauce in a pan with a spoon of oil. Cook for about ten minutes. Add the cut omelets, the grated Pecorino Romano cheese and the pennyroyal leaves. Stir the mixture well. Salt again if necessary and serve.
Tips to ensure the success of the dish:
- To make the omelets beautiful smooth, I pass to the pass the egg mixture into a strainer, so it becomes silky.
- Cook the omelets in a non-stick pan for crepes. Also use the same amounts of omelet mixture as if it were a crepe because they must be very thin. Cook over low heat because they should not darken.
- The peeled tomato sauce must be of excellent quality
