Fried anchovies were a classic of the summer for my family. Many years ago, my father bought a fryer to make tons of these crunchy delicacies.

Fried anchovies

  • Ingredients
  • 500 gr or 1 lb. of fresh anchovies cleaned and sliced in half lengthwise
  • 1 egg
  • Salt and pepper to taste.
  • Flour to taste
  • Peanut oil for frying to taste
  1. Instructions
  2. In a bowl, beat the egg with salt.
  3. Dry the anchovies with paper towel.
  4. Flour the anchovies lightly.
  5. Pass them through the egg and immediately fry them in hot oil at 325°F until golden brown.
  6. Drain on absorbent paper towel.
  7. Salt and serve.

Tips to ensure the success of the dish:

  • The anchovies must be passed through the egg just before being fried and not before.
  • Always use a thermometer to measure the oil temperature. It is an inexpensive tool, but it is useful for preventing the smoke point from overflowing with oil.
  • Do not reuse the frying oil more than twice.
