Fried anchovies were a classic of the summer for my family. Many years ago, my father bought a fryer to make tons of these crunchy delicacies.
Fried anchovies

- 500 gr or 1 lb. of fresh anchovies cleaned and sliced in half lengthwise
- 1 egg
- Salt and pepper to taste.
- Flour to taste
- Peanut oil for frying to taste
- Instructions
- In a bowl, beat the egg with salt.
- Dry the anchovies with paper towel.
- Flour the anchovies lightly.
- Pass them through the egg and immediately fry them in hot oil at 325°F until golden brown.
- Drain on absorbent paper towel.
- Salt and serve.
Tips to ensure the success of the dish:
- The anchovies must be passed through the egg just before being fried and not before.
- Always use a thermometer to measure the oil temperature. It is an inexpensive tool, but it is useful for preventing the smoke point from overflowing with oil.
- Do not reuse the frying oil more than twice.
