One thing that amused me when I was a child was when, after the main dish in a luxurious meal, they offered you the salad “to rinse your mouth.”
This side dish is healthy and light; it’s also good for those who suffer from cystitis. It not only actually cleans the palate, but is super fresh and tasty. I was inspired by a recipe by Chef Giorgio Locatelli, adapting the recipe using raw materials that I could find in the local market.
Apples, carrots, and almonds side dish

- 1 Granny Smith apple
- 4 carrots
- 2 tablespoons of sliced almonds
- 4-5 fresh mint and basil leaves
- Extra virgin olive oil to taste
- Salt and pepper to taste
- Lemon juice from ½ lemon
- Instructions
- Wash the apples well and then cut them into thin wedges.
- Wash the mint and basil well and chop it with a knife.
- Wash the carrots well, peel them, and cut them with a mandolin.
- Mix the oil, lemon juice, mint, salt, and pepper in a bowl with a whisk.
- Toast the almonds in a small pan.
- Place in a serving dish: carrots, apples, and almonds. Season everything and serve.
