In professional cooking schools you learn, first and foremost, how to clean and cook vegetables. One of the first recipes they showed me was this one.
The recipe that I report is, instead, from my mother, who often made this dish in the past as an accompaniment to roast beef.
Sweet and sour onions

- 1 lb. 7 oz (600 g) of fresh small onions
- 4 tablespoons of wine vinegar
- 4 tablespoons of chestnut honey
- Extra virgin olive oil to taste
- Salt and pepper to taste
- Instructions
- In a pan with some oil, stew the onions. Add lukewarm water, cover the pan, and cook for about thirty minutes.
- In a cup, mix the honey with the vinegar and a couple of tablespoons of water.
- Add the honey and vinegar mixture at the end of cooking. Reduce over high heat and season with salt and pepper.
- Serve hot.
