At the beginning of the 1900s, the legendary Auguste Escoffier dedicated dream ice cream cups to the most beautiful and interesting women of his time.
The beautiful American actress and singer Edna May inspired him for this creation, which combines three things that drive me crazy: ice cream, whipped cream, and cherries. Yummy!
Edna May ice cream cup

- 1 lb. (400 g) of vanilla ice cream
- 1 lb. 2 oz (500 g) of cherries
- 2 oz (50 g) of sugar
- 1 small glass of Maraschino liquor
- For decoration:
- 7 oz (200 ml) of fresh cream
- 1 teaspoon of vanilla sugar
- 4 oz (100 g) of strawberries
- Waffles to taste
- Instructions
- Wash and pit the cherries.
- Put the pitted cherries, sugar, and Maraschino in a pan. Cook for about fifteen minutes. Leave to cool.
- Wash and clean the strawberries. With an immersion blender, chop the strawberries with the sugar. Pass the mixture in a colander, making a coulis.
- In a very cold bowl, whisk the cream until fully whipped, adding the strawberry coulis at the end to color it pink.
- Pour the cold cherry compote on the bottom of the cups. Cover with scoops of vanilla ice cream.
- Decorate with pink whipped cream and waffles.
