From my stay in Finland, I remember: salmon and shrimp, Karelian tarts “karjalanpiirakkala”, reindeer ham and vodka, the Koenig pastry shop, and the Russian restaurant Ravintola. And, above all, the Helsinki market which fills up with benches of fragrant berries in summer.
Another thing I remember very well: my dear friends and colleagues from The Italian Trade Commission. One of them, Sanna, gave me this easy and delicious recipe.
It is a soft tart garnished with Finnish berries. The most popular berry in Finland is the cloudberry, similar in appearance to a raspberry but orange and sourer. Obviously, I have adapted the recipe with products that can be found here.
Sanna's Finnish soft tart
- Preparation time: 40 minutes
- Ingredients for 8-10 servings

- 5 tablespoons (75 grams) of butter
- 3 eggs
- 5 tablespoons (75 grams) of sugar
- 2 cups (250 grams) of all-purpose flour
- 1 teaspoon (5 grams) of baking powder
- 5 tablespoons of berry jam
- 1 basket of raspberries
- 1 basket of blueberries
- 1 basket of blackberries
- Powdered sugar to taste
- Instructions
- Preheat the oven to 350° F.
- In a bowl, whisk the butter and sugar with a whisk. Add the eggs one at a time. Add the sifted flour and then the sifted yeast.
- In a buttered and floured cake pan, place the dough evenly with a pastry bag, ensuring it is slightly thinner in the center and raised along the edge. Spread a layer of jam on the surface.
- Bake in the oven for about twenty minutes.
- Garnish with more jam, which will serve to adhere the fruits to the cake, then decorate with fresh berries and icing sugar.
Tips to ensure the success of the dish:
- The timing of cooking in the oven is indicative because each oven cooks differently.
- You can replace the jam with other flavors. I also make it with fig jam and fresh figs.
