My sister gave me this delicious recipe.
I slightly modified it, replacing the sugar with honey in order to make the cookies even more “rustic”.
Pearl spelt cookies

- 7 oz (200 grams) of pearl spelt flour
- 4 oz (100 grams) of all-purpose flour
- 3 oz (80 grams) of honey
- 2 teaspoons (10 grams) of baking powder
- 1 pinch of salt
- 1 egg
- 2 tablespoons (30 ml) of hot milk
- 3 tablespoons (50 ml) of seed oil
- Grated lemon zest
- Brown sugar to taste
- Instructions
- Preheat the oven to 350°F.
- Measure the flours and the baking powder into a bowl, stir to combine, then sieve into a mixing bowl.
- In a bowl, mix the egg with honey, hot milk, vanilla seeds, lemon zest, and seed oil. Gradually add the sieved flours and a pinch of salt.
- Create a roll with the dough about 2 cm thick and cut it into form sticks about 5 cm in length. Sprinkle the surface of the sticks with brown sugar.
- Place the biscuits onto a baking sheet covered with parchment paper and bake them in the oven until golden brown.
Tips to ensure the success of the dish:
- The dough is similar to short crust pastry.
- The cookies should be placed spaced apart on the baking tray because they will expand during cooking.
- The cookies should not darken too much, so it is better to check their cooking every now and then. My oven takes about twenty minutes.
