On a trip to Mongolia, I met this super smart woman.
Over the years I went to visit her several times in Sacile in Friuli – and that’s where I discovered some pearls of the local cuisine.
These crunchy donuts are a delicious accompaniment to Easter chocolate.

  • Ingredients
  • 1 lb. 2 oz (500 grams) of all-purpose flour
  • 6 yolks
  • 2 whole eggs
  • 6 oz (170 grams) of sugar
  • 3 oz (80 grams) of butter at room temperature
  • A pinch of salt
  1. Instructions
  2. Preheat the oven to 350° F.
  3. On a pastry board, sift the flour, create a hole in the center like the crater of a volcano, and pour in all the other ingredients; knead quickly.
  4. Roll into finger-thick rolls and close them in a circle.
  5. Place the donuts on a baking sheet.
  6. Cook for about twenty minutes.

Tips to ensure the success of the dish:

  • The mixture must not be too dry.
  • They can be kept in tin boxes for a week.
