As a child, I didn’t like garlic. Today, however, I like it a lot.
My first encounter with substantial quantities of garlic was during my stay in the USA. There I began to eat a lot of it on bread, as a pasta sauce, and as a condiment for vegetables.
This sauce is excellent and very digestible. It makes even boiled green beans incredible. I was inspired by a Gordon Ramsey recipe, then modified it to my tastes. I also use the sauce as a condiment for croutons or as an accompaniment to fresh cheeses.
Green beans with almond and garlic sauce

- 2 lb. 3 oz (1 kg) of green beans
- 1 oz (30 grams) sliced almonds
- For the sauce:
- 2 oz (50 grams) of peeled almonds
- 1 head of garlic
- 1 tablespoon apple cider vinegar
- 1 tablespoon of mustard
- 1 tablespoon of honey
- ½ cup (150 ml) of extra virgin olive oil
- Instructions
- Wash the green beans well and boil them for about seven minutes in salted water. Drain them.
- Preheat the oven at 250°F.
- Toast the almonds in the oven for 15 minutes, then cut them into strips.
- Increase the temperature of the oven to 350° F.
- Bake the garlic head in the oven for twenty-five minutes.
- Prepare the sauce: open the head of garlic and remove about half of the cloves by placing them in a mixer. Add ½ of the almonds, the vinegar, the honey, the mustard, and the extra virgin olive oil. Mix well until you have a creamy sauce.
- Serve the green beans with the garlic sauce and the remaining sliced almonds.
