In my super-personal paper cookbook, I don’t have many recipes with broccoli and cauliflower because I have to admit that I don’t particularly like them.
This recipe, adapted from one by Marta Stewart, is one of the very few ways I can eat these healthy vegetables.
Roasted spiced cauliflower

- 1 cauliflower
- 2 spoons of curry
- 1 tablespoon of sweet paprika
- 4 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- Chopped parsley to taste
- Instructions
- Wash the cauliflower well. Dry it and cut it into slices ½ inch thick.
- Preheat the oven to 450°F.
- In a small bowl, mix the spices with the oil. Season with salt and pepper.
- Distribute the cauliflower slices on a baking tray covered with baking paper and season them with the spiced oil.
- Bake in the oven for ten minutes. Remove from the oven and turn the cauliflower slices upside down. Cook again for another ten minutes.
- Sprinkle with chopped parsley and serve hot.
