Salad with contrasting flavors that match perfectly: the bitterness of the salad with the sweetness of the cherries.
One of my favorite late spring salads.

Mixed salad with Feta and cherries

  • Ingredients
  • 1 head of rocket
  • Seasonal mixed salad to taste (e.g. watercress, dandelion, lamb’s lettuce, burnet, sorrel, chervil)
  • 4 oz (100 grams) of feta cheese
  • 4 oz (100 grams) of cherries
  • Balsamic vinegar to taste
  • Extra virgin olive oil to taste
  • Salt to taste
  1. Instructions
  2. Wash the salad well. Drain it.
  3. Wash, drain, and pit the cherries.
  4. Dice the feta.
  5. In a serving dish, arrange the salad and season with oil, vinegar, and salt. Add the cherries and the feta. Serve.
  6. If you want more crunchiness, you can also accompany it with mixed seeds or toasted, sliced almonds.
