Salad with contrasting flavors that match perfectly: the bitterness of the salad with the sweetness of the cherries.
One of my favorite late spring salads.
Mixed salad with Feta and cherries

- Ingredients for 4-6 servings

- Ingredients
- 1 head of rocket
- Seasonal mixed salad to taste (e.g. watercress, dandelion, lamb’s lettuce, burnet, sorrel, chervil)
- 4 oz (100 grams) of feta cheese
- 4 oz (100 grams) of cherries
- Balsamic vinegar to taste
- Extra virgin olive oil to taste
- Salt to taste
- Instructions
- Wash the salad well. Drain it.
- Wash, drain, and pit the cherries.
- Dice the feta.
- In a serving dish, arrange the salad and season with oil, vinegar, and salt. Add the cherries and the feta. Serve.
- If you want more crunchiness, you can also accompany it with mixed seeds or toasted, sliced almonds.
