I am trying to reduce the consumption of animal meat as much as possible. Some recipes are so good I don’t feel like it’s a stopgap at all, like this veggie burger that I find exquisite.
A perfect sandwich.
Mushroom and bean veggie burger

- 9 oz (250 grams) of champignon mushrooms
- 1 clove of garlic
- 7 oz (150 grams) of boiled beans
- 7 oz (150 grams) of cooked pearl spelled
- 3 oz (70 grams) of breadcrumbs
- 1 egg
- 2 tablespoons of paprika
- 2 tablespoons of soy sauce
- Chopped parsley to taste
- Salt and pepper to taste
- Extra virgin olive oil to taste
- For the bun:
- 6 hamburger buns
- 2 tomatoes
- 1 lettuce
- Mayonnaise to taste
- Mustard to taste
- Instructions
- In a pan with oil and the garlic, cook the champignon mushrooms over high heat.
- As soon as they are ready, put them in a food processor with the beans, spelled, breadcrumbs, the egg, paprika, parsley, and soy sauce. Season with salt and pepper and pulse the robot. The mixture must be compact.
- Leave it in the refrigerator for 24 hours.
- After this time, take the mixture with a spoon and form hamburgers. Cook them in a pan with oil for two minutes on each side.
- Meanwhile, prepare the sandwich. Wash the lettuce and tomatoes well. Cut the tomatoes into slices.
- Toast the bread, spread some mayonnaise on the base, and arrange a salad leaf, a few slices of tomato and the well-cooked hamburger. Spread plenty of mustard on the top slice of bread. Close the sandwich and serve it hot.
Tips to ensure the success of the dish:
- If the beans are canned, rinse them well before using them to remove the flavor of the preservatives.
