In August, the few of the local market stalls that remain open during the holidays show their roundness in the “Yellow Peach.”
A very good variety is that of Monte San Biagio, in the province of Latina, which has a yellow peach which is firm, with a very sweet pulp.
A dessert of my childhood that’s adored by my grandfather, Gigi, and my father has always been peaches in wine…many slices of peach immersed in very cold white wine.
Very easy to prepare and always a feast for diners.
Peaches in wine

- 6 yellow peaches
- 3 tablespoons of sugar
- 3 glasses of chilled DOC white wine
- Instructions
- Peel the peaches and cut them into slices.
- Put the peaches in a jug, sprinkle them with sugar, and mix with a spoon. Cover them and leave them in the refrigerator for at least an hour.
- Before serving, wet them with very cold wine.
