The recipe was given to me by my Uncle Giorgio.
He brings one salami to every family Christmas gathering.
I like it very much for a number of reasons: It has dried figs (which are my passion), it’s not too sweet, it’s very easy to prepare, and it doesn’t contain eggs.
The recipe is taken from Claire Burnet’s book “Chocolate Cookbook.”
Sweet Salami Without Eggs
- Preparation time: 30 minutes
- For 1 salami

- Ingredients
- 125g of 70% dark chocolate
- 50 g of butter
- 100 g of dried figs
- 80 g of dates
- 50 g of dried apricots
- 50 g of sultanas
- 50 g of raisins
- 50 g of almonds
- 25 g of candied orange
- 25 g of icing sugar
- Instructions
- Coarsely chop the dried fruit, candied fruit, and almonds.
- Use the bain-marie method to melt the chocolate with the butter. As soon as the chocolate is melted, add the dried fruit and mix.
- Leave the mixture to cool for about twenty minutes, then place it on a tray covered in cellophane.
- Shape the mixture with your hands into a salami shape that’s about 30 cm long. Wrap the salami in cellophane and roll the ends tightly to seal it.
- Transfer the roll to the refrigerator to firm up for a few hours, taking it out of the refrigerator to roll it every fifteen minutes or so to keep it cylindrical in shape.
- Ten minutes before serving, remove it from the refrigerator, remove the cellophane, and roll the salami in icing sugar.
- Serve sliced.
Tips to ensure the success of the dish:
- The bain-marie is a cooking process done in a container that is not in direct contact with the fire but immersed in water and kept at the desired temperature. In this case, we place a bowl inside a saucepan full of water (but not coming into contact with the water).
- If you want to make the preparation totally vegan, you can replace the butter with veg butter or seed oil (40 g of oil instead of 50 g of butter).
- Salami can be stored in the fridge for up to a week.
