This recipe was given to me by my dear friend Giuseppe, a great chef—and above all, an alpha male from Potenza who always makes us gush at every dinner.
The name of this recipe was originally “Beans Bud.” The name is inspired by the spaghetti western movie by Bud Spencer and Terence Hill “They Call Me Trinity.” I loved them when I was I child!
Beans “Italian Spaghetti Western” Style
- Preparation time: 2 hours
- Serves 4-6 people

- Ingredients
- 1 kg boiled beans
- 200g bacon
- 4 sausages
- 1 white onion
- 1 stalk of celery
- 1 small carrot
- 1 bay leaf
- 500 g peeled tomatoes
- 1 tablespoon of tomato paste
- 1 piece of fresh chili pepper
- Extra virgin olive oil to taste
- Salt and pepper to taste
- Instructions
- Dice the onion, celery, and carrot.
- Cut the bacon and lightly prick the sausages with the tines of a fork.
- In a cast iron pan, brown the bacon and the sausages. As soon as they are crispy, add a tablespoon of oil and the onion, celery, and carrot with the chili pepper and bay leaf. Cook over low heat.
- When everything is well browned and sizzling, add the beans with all the cooking water and let the liquid “draw” well. At this point, add the peeled tomatoes and the tomato paste and continue cooking over a very low heat for at least an hour and a half. Add salt and pepper.
- Serve with bread, preferably homemade.
Tips to ensure the success of the dish:
- It’s better to use a cast iron pan.
- Peeled tomatoes must be of excellent quality.
