This is the chocolate version of American cookies that I ate years ago in New York.
They are indescribably delicious and I recommend them to everyone.
For a truly gourmand snack, they can be paired warm from the oven with ice cream…the memory already makes me swoon!

Extra Chocolatey cookies

  • Ingredients
  • 180 gr of all-purpose flour
  • 10 gr of bitter cocoa
  • 5 gr of baking powder
  • 120 gr of butter
  • 65 gr of granulated sugar
  • 65 gr of brown sugar
  • 100 gr of dark chocolate
  • 100 gr of milk chocolate
  • 1 egg
  1. Instructions
  2. Coarsely chop the chocolate.
  3. Sift the flour with the cocoa and baking powder.
  4. In a planetary mixer, quickly mix the very cold chopped butter until it becomes workable; add the sugars and mix briefly again. Combine the chopped chocolate and dry ingredients and mix briefly again. The mixture should be smooth but grainy. Add the egg at the end.
  5. Scoop the dough with an ice cream scoop, forming cookies of about 70 g each. Place the cookies in the freezer for at least ninety minutes.
  6. Preheat the oven to 375°F.
  7. Place the cookies on a baking sheet covered with parchment paper and place this sheet on top of another upside down one.
  8. Bake for about ten minutes. Let the cookies cool and serve.

Tips to ensure the success of the dish:

  • The faux-complex system of the two baking sheets (the one on top with the cookies and the one below turned upside down) is to keep the cookies from burning underneath. It is a step that cannot be eliminated.
  • The timing of baking is approximate because every oven bake differently. My oven bakes them in eleven minutes. Some friends’ oven in eight minutes. You have to do some testing.
  • The secret of these cookies lies in the semi-baking of the inside, which remains so creamy (Chewy). Therefore, they should not be overcooked, but most importantly, only bake the cookies that will be eaten the same day. They are in fact not as good the next day. I always leave some in the freezer to bake in the morning before breakfast.
