When I don’t want to turn on the oven but still have a craving for dessert I make these super easy spoon desserts. Stored well in the refrigerator they are good for 3-4 days.
Blueberry spoon dessert
- Preparation time: 40 minutes
- Serves for 4 small glasses
- Difficulty: Easy recipe
- Ingredients
- 3 blueberry baskets
- For the Namelaka:
- 115 gr of blueberry pulp
- 200 gr of double cream
- 5 gr of glucose
- 3 gr of gelatin
- 170 gr of white chocolate
- For the glass:
- blueberry pulp q.b.
- ladyfinger to taste
- 30 fresh blueberries
- Instructions
- Rinse blueberries well, dry them by patting them lightly. Place some of them in a bowl and chop them with an immersion blender. Sift the pulp through a fine-mesh strainer. Weigh the puree needed for the Namelaka and set the remaining pulp well covered aside.
- Rehydrate the gelatin in cold water, drain and squeeze well.
- Heat a small portion of the blueberry puree with the glucose, gelatin and pour over the partially melted white chocolate.
- Blend the mixture with an immersion blender and add the rest of the puree and cream.
- Dip the ladyfinger in the blueberry puree and arrange them in the small glasses. Pour a layer of Namelaka, some whole blueberries and repeat for another layer.
- Leave in the fridge for 4 hours before serving.
Tips to ensure the success of the dish:
- In order not to change the color and flavor of the fruit this should not be cooked. For this only a small portion is used to dissolve the gelatin and glucose.
- You can change the taste using raspberry o strawberry.
