A budget friendly family classic that my mother often during my childhood.
Since it was one of my favorite dishes, I insisted on measuring out the ingredients so as to have the same flavor and consistency. A dish whose only difficulty is turning the it upside down in the pan without breaking it.
It is super delicious thanks to the crunchy outer crust, the soft consistency of the potato and the stringy cheese… yum
Mom's Potato and mozzarella Pie

- Ingredients
- 3 medium potatoes
- 2 tablespoons of potato starch
- 50 grams of grated parmesan cheese
- 1 egg
- 1 small onion
- 100 grams of ham
- 100 grams of mozzarella cheese
- extra virgin olive oil to taste
- salt and pepper to taste
- Instructions
- Wash the potatoes. Put the potatoes into a large saucepan, cover with water and boil them for at least forty minutes, until tender. When they are cooked, mash them with a potato masher.
- In a pan greased with oil, stew the chopped onion.
- Add the onion to the potatoes and then the grated parmesan cheese and the egg. Season with salt and pepper and mix everything together until smooth.
- Put half of the potato dough in the greased pan, spreading it well on the pan.
- Arrange a layer of ham and one of mozzarella cut into thin slices. Cover with another layer of ham and the rest of the potatoes.
- Cook over medium heat for about ten minutes per side.
- Serve it hot.
Tips to ensure the success of the dish:
- To prevent the cake from sticking to the pan, I use baking paper. I cut out two disks the size of the pan and put the dough on one, and put the other on the lid when I turn it over
