Gnocchi

Gnocco is a Lombard word from the Middle Ages, which defined any dough with a rounded shape. The first gnocchi were based on flour or semolina.

It seems that the gnocchi with potatoes are an invention of Alessandro Volta, known best for the invention of the pile, and are therefore a rather recent recipe.

In Rome, potato gnocchi represent the traditional dish of Thursday: “Thursday gnocchi, Friday cod, Saturday tripe.” In our family instead, because of its long preparation, they were the typical Sunday dish.
